Papain, also known as papain enzyme, is a protein hydrolase. Papain is a low-specificity protein hydrolase contained in papaya (Carieapapaya), which is widely found in the roots, stems, leaves and fruits of papaya, among which it is most abundant in immature milk. The active centre of papain contains cysteine, which belongs to mercapto protease, it has the features of high enzyme activity, good thermal stability, natural health and safety, so it is widely used in food, medicine, feed, daily chemical, leather and textile industries.

Enzymatic Activity: Papain has high enzymatic activity and good thermal stability. It can decompose proteins under acidic, neutral, and alkaline conditions.
Specificity: Papain is a cysteine protease containing a sulfhydryl group (-SH), which has broad specificity and strong hydrolytic ability towards animal and plant proteins, peptides, esters, and amides. However, it cannot decompose peptone.
Optimal Conditions: The optimal pH for Papain activity is 67 (generally 39.5 is acceptable), and the optimal temperature is 5565°C (generally 1085°C is acceptable). It is inhibited by oxidants and activated by reductants.
Food Industry: Papain is widely used in the food industry for beer chilling resistance (by hydrolyzing proteins in beer to prevent turbidity caused by refrigeration), meat softening (by hydrolyzing muscle and collagen proteins to soften meat), preparation of precooked cereals, and production of hydrolyzed proteins and meat flavors.
