Oleanolic acid is a pentacyclic triterpenoid isolated and extracted from the fruits of the whole herb or chasteberry of the genus Swertia, family Gentianaceae, and is present in a wide range of plants as both free and liganded forms. Oleanolic acid is widely present in plants, with a general content of 0.2% to 2%. Cucurbitaceae plant rosmarinus officinalis has a higher content of 1.5% to 2% and chasteberry fruit contains 0.6% to 0.7%. Oleanolic acid is white needle-like crystals (ethanol), odourless and tasteless. It is unstable to acid and alkali.
