  • Food Source: Natto is a fermented cheese-like food produced by adding Bacillus natto, a beneficial bacteria, to boiled soybeans. This fermentation process results in the production of nattokinase.
  • Discovery: Nattokinase was discovered by Dr. Hiroyuki Sumi in 1980 during his research on thrombolytic enzymes at Chicago University Medical School.
