Allicin is an organosulfur compound extracted from the bulb of garlic (Allium sativum) of the genus Allium, family Alliaceae, and is also found in onions and other alliums, with the scientific name of diallyl thiosulfinate and the chemical formula C6H10OS2. The solid agent is a white to light yellow fluid powder, and the liquid agent is a light yellow to brown volatile oily liquid with a strong garlic odour. Decomposes on distillation and forms an oily precipitate when placed in aqueous solution. Insoluble in glycerol, propylene glycol, etc., can be mixed with ethanol, chloroform, ether, benzene. Unstable to alkali, stable to acid. The solution fails quickly when exposed to heat. Allicin has strong antibacterial effect, in very low concentration can inhibit a variety of gram-positive cocci and gram-negative bacilli, moulds, viruses, protozoa, pinworms and so on also have an inhibitory effect.
