Xanthan gum, also known as Hansen's gum, is a widely used microbial extracellular polysaccharide produced by Xanthomonas campestris with carbohydrates as the main raw material (e.g., corn starch) through fermentation engineering. It has unique rheology, good water solubility, stability to heat, acid and alkali, and good compatibility with a variety of salts, as a thickener, suspending agent, emulsifier, stabiliser, which can be widely used in more than 20 industries such as food, petroleum, pharmaceuticals, etc., and it is the world's largest production scale and extremely wide range of uses of microbial polysaccharides.
