Production

  • Source Materials: Gelatin can be obtained from various animals, but it is mainly produced from cattle or pork in practice. Special halal and kosher gelatin is also available.
  • Production Process: The raw materials are processed through a series of steps including degreasing, alkaline treatment, acid treatment, and finally drying to obtain the finished gelatin product.

Physical and Chemical Properties

  • Appearance: Gelatin is typically available in the form of transparent, thin sheets or particles that are white or light yellow in color.
  • Solubility: Gelatin is insoluble in cold water but can hydrate readily in hot water. When added to cold water, gelatin granules swell into particles absorbing 5-10 times their weight in water.
